EXCUSE ME I HAVE A QUESTION! WHAT’S THIS ALL ABOUT? WHAT IS “SOFRITO”?
Sofrito (Spanish, pronounced [soˈfɾito])
Sofregit (Catalan, pronounced [sufɾə'ʒit])
Soffritto (Italian, pronounced [sofˈfritto])
Refogado (Portuguese, pronounced [ʁɨfuˈɣaðu])
A ‘sofrito’ is a staple meal preparation in Mediterranean, Spanish, Italian, Portuguese and Latin American cooking. Many other cuisines and cultures have their own version. Typically, it consists of aromatic ingredients such as onion, garlic, carrots and celery cut into small pieces and sautéed in oil over a low heat. Here’s our go-to sofrito recipe so that you never forget it!
A sofrito is the base, the jumping off point, the smell that lights up the kitchen, the first lines of a poem, first brushstrokes, first few bars.
