SEZZIE JANE’S TUNA PATTIES - BY ARTIST ZOE BLOW

ingredients

1 x large can of Sirena Tuna

4 x large potatoes

UNPEELED - leave their clothes on please!

1 x egg

Bread crumbs

Your herb of choice

Chopped

Parmesan

To taste

Salt and Pepper

Lemon Juice

To taste

1 x teaspoon flour / cornflour

If the mix is too wet

method

1. LEAVING SKINS ON, BOIL AND MASH POTATOES. MOVE TO BOWL.

2. DRAIN OFF TUNA OIL AND ADD TO MASH, ALONG WITH PAREMESAN, SALT AND PEPPER, A SPLASH OF LEMON JUICE AND 1 EGG BEATEN UP. MIX

3. MIX HERBS AND BREAD CRUMBS, AND, USING A DESSERT SPOON TO MAKE PATTIES WITH MIX (ROLL WITH HANDS), ROLL INTO CRUMB MIXTURE

4. FRY IN HOT VEGETABLE OIL AND COOL ON A PAPER TOWEL.
