Refogado (Portuguese, pronounced [ʁɨfuˈɣaðu])

A ‘sofrito’ is a staple meal preparation in Mediterranean, Spanish, Italian, Portuguese and Latin American cooking. Many other cuisines and cultures have their own version. Typically, it consists of aromatic ingredients such as onion, garlic, carrots and celery cut into small pieces and sautéed in oil over a low heat.
